<p>Clafoutis is a fancy french word for a crustless fruit tart made with a baked custard.  The filling is soft, fragrant and sweet, with the texture of a lemon tart, punctured with chunky pieces of fruit. Classically cherries.  These little clafoutis are baked in muffin cups so they are individually sized. Perfect for a party or a delicate presentation.   Or so you can try and see how many you can fit in your mouth at once.</p>

<p>This brownie recipe emerged from a debilitating chocolate craving.  Though these brownies do not involve any <em>special</em> ingredients, this is the sort of recipe I imagine college students making at 2am.   </p>

<p>They are gooey, they are ultra chocolatey and the marshmallow melts into pockets of sweet crystallized sugar.    You should also be proud to hear that because I take quality control so seriously, I made sure to check every inch of that brownie pan when photographing them the next morning.  I left no crumb uneaten.</p>

<p>There were only seconds between my tasting the first one, and my running downstairs clutching a hot fritter between my fingers I was so eager to share them.  The husband was doing manly things and his hands were covered in sawdust, or castor oil, or something inedible.  So I plopped a fritter right into his mouth.  </p>

<p>a dozen fresh figs<br />
1 tablespoon olive oil<br />
2 tablespoons honey<br />
freshly ground pepper (optional)<br />
salt</p>
<p>Preheat oven to 400F.  Trim the stems off the figs and cut in half.  Place them in a casserole dish cut side up.  Drizzle with honey, olive oil,  and a pinch of salt and freshly ground pepper.  Put in oven and roast for 15-20 minutes. Until soft and starting to caramelize.<br />

<p>However, when I saw this recipe in <a href="http://www.womenshealthmag.com/" rel="nofollow" >Women&#8217;s Health magazine (<span style="text-decoration: underline;">March 2010</span>)</a>, I was intrigued because the icing was light and seemed to drip right off of the cupcakes. Plus this recipe is made with whole wheat pastry flour, something I am just <a href="http://www.dailyunadventuresincooking.com/2010/01/pumpkin-coconut-muffins-recipe.html">learning about</a>.</p>

<p>In the end I actually weaseled out of making the cream cheese frosting for these carrot cake cupcakes anyways.   The cream cheese I was intending to use had gone bad so I substituted sour cream instead.  A delicious alternative and interesting in itself. I have left the recipe as it is with cream cheese. Let me know if you make the icing with cream cheese, as I intend to next time.</p>

<strong>Carrot Cake Cupcakes</strong><br />
(makes 18 cupcakes)<br />

<p>2 cups whole wheat pastry flour (can substitute 2 tablespoons flour for ground flax)<br />
1 cup all purpose flour<br />
2 teaspoons baking soda<br />
1 ½ teaspoons ground cinnamon<br />
1 teaspoon ground ginger<br />
1/2 teaspoon ground nutmeg<br />
1/2 teaspoon kosher salt<br />
1 cup brown sugar<br />
1 cup canola oil<br />
2 large eggs<br />
1/2  cup plain yogourt<br />
1 lb carrots, grated<br />
1/2  cup golden raisins<br />
6 tablespoons (4 oz) light cream cheese at room temperature (or sour cream!)<br />
1 cup icing sugar<br />
1/4 cup chopped walnuts</p>
<p>Preheat oven to 350F. In a medium bowl combine flours, baking soda, salt, nutmeg, ginger and cinnamon.</p>
<p>In a second bowl beat together brown sugar and canola oil for 5 minutes. Add eggs one at a time. Stir in a yogourt, carrots and raisins. Mix in the flour mixture until just combined.</p>
<p>Spoon batter into paper lined muffin tins and bake for 20 minutes or until a toothpick comes out clean.</p>
<p>Using an electric mixer, whip cream cheese and sugar. Spread over each cupcake and top with walnuts.<br />

<p>You will <em>never</em> look at a banana the same way after you have tried this. When I looked at bananas I used to see a conduit to peanut butter or a natural oatmeal sweetener, now I see ice cream.</p>
<p>But not just any ice cream, in fact, not even ice cream at all &#8211; at it&#8217;s simplest this frosty treat is just bananas.  This dessert is raw, vegan, natural, and easy to make without an ice cream maker. In fact it makes an amazing afternoon snack or even breakfast.  Of course you can fancy it up with wonderful things like dark chocolate, almonds, peanut butter or coconut. Toppings make any dessert more fun.</p>

<p>1 cup butter<br />
1 cup white sugar<br />
1 cup brown sugar<br />
3 eggs<br />
3/4 cup cocoa<br />
1 cup flour<br />
1 1/2 teaspoon baking powder<br />
1 1/2 teaspoon vanilla<br />
1/4 cup walnuts (optional)</p>
<p><em>icing:</em><br />
1/2 cup butter, softened<br />
1 cup icing sugar<br />
2/3 cup cocoa butter<br />
2 tablespoons coffee</p>
<p>Preheat oven to 350F.  Butter a 9&#215;13&#8243; baking pan and set aside.  Melt the butter (I usually use the microwave) and allow to cool a bit. Stir together butter, sugars, eggs, and cocoa.  Stir together baking powder and flour then combine with wet ingredients.  Stir together gently.  Stir in vanilla and walnts if using.  Pour into the pan and bake for 20-30 minutes. I like them on the soft side and took them out at ~22minutes.</p>
<p>Allow to cook before icing.  To make the icing whip together icing ingredients and ice brownies.  These are best if you let them set in the fridge before cutting.  They also freeze well!<div class="clear"></div></div>
