<p>You will <em>never</em> look at a banana the same way after you have tried this. When I looked at bananas I used to see a conduit to peanut butter or a natural oatmeal sweetener, now I see ice cream.</p>
<p>But not just any ice cream, in fact, not even ice cream at all &#8211; at it&#8217;s simplest this frosty treat is just bananas.  This dessert is raw, vegan, natural, and easy to make without an ice cream maker. In fact it makes an amazing afternoon snack or even breakfast.  Of course you can fancy it up with wonderful things like dark chocolate, almonds, peanut butter or coconut. Toppings make any dessert more fun.</p>

<p>I do not subscribe to the belief that fruit is bad if you are on a diet. I know there was some publicity awhile back about how you weren&#8217;t allowed to eat bananas on the Biggest Loser diet.</p>
<p>Well, eat this.  (Oh and <em>we have </em>eaten it<em>.</em> Every night in the last week.)<br />

<p>The reason I chose the Manuka Honey was that it has such a distinct, and delicious flavour. Luckily for me, J&#8217;s parents always bring it back from New Zealand for us so I don&#8217;t have to pay the crazy North American prices. I am sure regular honey would be delicious too. If you are looking for something sweet &#8211; add more sugar, we like it tart in our house. Also, J recommends it with a crumbled <a href="http://www.dailyunadventuresincooking.com/2009/04/peanut-butter-and-banana-muffins.html">peanut butter and banana muffin</a> on top. That man is spoiled.</p>
<p>If you are wondering if the rhubarb came from my garden, unfortunately it didn&#8217;t. We have been trying to grow it for two and a half years now. Our first plant was eaten by a deer. (Apparently no one told him the leaves are poisonous?) Our second plant was looking pretty bad last weekend, I am not sure it is established enough to survive our current heat and my lack of watering.  I have heard from multiple sources that Rhubarb is almost impossible to kill once it gets going.<span style="font-weight: bold;"> Is anyone successfully growing Rhubarb? Any tips?</span></p>

<div class="print-this-content"><span style="font-style: italic;">Rhubarb and Manuka Honey Frozen Yogourt </span><br />
<span style="font-style: italic;">(makes ~ 1L)</span></p>
<p>600g rhubarb, washed, trimmed and cut into 3/4&#8243; lengths<br />
1/4 cup water<br />
1/4 cup Manuka honey (or regular honey)<br />
1 tablespoon sugar<br />
1/2 teaspoon vanilla<br />
500ml full fat plain yogourt</p>
<p>Combine rhubarb and water in a sauce pan and turn up to medium-high heat. When it boils, reduce temperature to a simmer and add honey and sugar. Stir regularly until rhubarb is soft. Add vanilla and remove from heat. Cool to room temperature. Combine with yogourt and chill in the fridge for 8 hours or overnight. Freeze according to your ice cream maker&#8217;s instructions.<br />
I like this best a few hours after it has been made and it is some where between soft serve and really hard. If it has been frozen for awhile remove from the freezer thirty minutes before you want to serve it. Your wrists will thank you.<div class="clear"></div></div>

This is what came out of my first blackberry crate and I will most definitely be making it again. I don&#8217;t buy into that whole &#8220;straining&#8221; out of the seeds that you are supposed to do. They add texture and crunch and make it more natural seeming. Plus, I fully can&#8217;t be bothered.</p>

This recipe was inspired by the <a href="http://www.amazon.com/gp/redirect.html?ie=UTF8&amp;location=http%3A%2F%2Fwww.amazon.com%2FPerfect-Scoop-Sorbets-Granitas-Accompaniments%2Fdp%2F1580088082%3Fie%3DUTF8%26s%3Dbooks%26qid%3D1183487156%26sr%3D8-1&amp;tag=dailyunadvent-20&amp;linkCode=ur2&amp;camp=1789&amp;creative=9325" rel="nofollow" >Perfect Scoop</a> and a couple of recipes on Cook&#8217;s Illustrated.<span class="fullpost"> Funny thing about blackberries is that in the Pacific Northwest they are naturalized, aggressive and really hard to get rid of &#8211; which means they grow everywhere. I didn&#8217;t realize there was anything funny about this until I was reading a wikipedia article on blackberries and apparently this is the exception rather then the norm.</span></p>
<p>I admit that I didn&#8217;t pick this batch myself but rather bought them from a farm stand where they had been picked locally &#8211; that said I have a yogurt container in the fridge waiting to turn into something fabulous, I am thinking either a batch of scones or a galette like this <a href="http://everybodylikessandwiches.blogspot.com/2007/08/im-hooked-on-blackberries.html" rel="nofollow" >one</a>.</p>

<div class="print-this-content"><span style="font-style: italic;">Blackberry Frozen Yogourt </span> <span style="font-style: italic;">(makes ~1.4L)</span></p>
<p>2 cups fresh blackberries, washed and drained<br />
4 cups plain yogourt, at least 1% Butter Fat<br />
½ teaspoon vanilla<br />
¾ cup sugar<br />
2 teaspoons fresh lemon juice</p>
<p>In a bowl big enough to hold all the ingredients combine the blackberries and sugar. Using your clean hands squish the blackberries so that the biggest chunks are the seeds. You should have what looks like a liquidy jam now. Stir in the remaining ingredients until well blended. Cover and chill for at least an hour in the fridge. Process in an ice cream maker according to the ice cream makers instructions.<br />
