			<content:encoded><![CDATA[<p><em>Pho Ga</em> is a Vietnamese chicken soup frequently enjoyed for breakfast.  Most popular in the north, it is a combination of rice noodles, cooked chicken, lightly pickled onion, pepper and a scant amount of herbs. Unlike its beefy cousin <em>Pho Bo</em> the broth is only very lightly spiced with just a hint of cinnamon, star anise and cloves.</p>

<p>In true Hanoi style this version is garnished very lightly, though if you like you can add sprouts, basil and more herbs.  I would advise to double the broth recipe as it freezes beautifully, and you can do this by simply adding an extra pound or two of chicken bones.</p>
<p>Unlike the <a href="http://www.dailyunadventuresincooking.com/2010/09/tips-and-tricks-for-making-chicken-stock.html/">stock tutorial</a> previously written on this site, this recipe uses a slightly different technique more common in Asian stock recipes. The meat and chicken bones are first boiled to extract as much of the impurities as possible. This water is then discarded and replaced with clean cold water in an attempt to get the clearest stock possible. Both methods will work and I have tried both on this recipe.</p>

<p>When cooking a recipe that is all about a leafy dense green, I often turn to bacon to liven it up and make it more pleasing.  Somehow it is much easier to sell Swiss chard soup as a dinner option when I tell the husband it is bacon and chard soup.  Ni lie involved, that&#8217;s what it is and it is delicious.</p>

If you are freezing the soup, don&#8217;t add the cream until you are reheating it.</p>

<p>Is there a particular ingredient which always goes rotten or off in your fridge before you can cook with it?  Cream, fresh herbs, and celery are things which frequently go past their prime and expiry date before they get used in my house. <p>Traditionally Caldo Verde is a Portugese soup made primarily with potatoes, onions, kale, and frequently a portugese cured meat such as chouriço or linguiça.  This version simply omits the meat for a healthy, Vegan alternative.   Perfect to warm you up on a cold day.</p>

<div class="print-this-content"><em>Vegan Caldo Verde Recipe<br />
(serves 2)</em></p>
<p>1 tablespoon of olive oil<br />
1/2 onion, chopped fine<br />
1 clove garlic, minced<br />
1 large baking potato cut into small dice<br />
1 1/2 cups water<br />
salt and pepper<br />
1 cup of finely chopped kale<br />
olive oil for garnish</p>
<p>In a small sauce pan sweat the onions over medium low heat for 3 minutes. Add the garlic and sweat for 1 more minute stirring often so garlic doesn&#8217;t brown.  Add the potato and cover with water. Stir in a 1/4 teaspoon of salt and a dash of freshly ground pepper. Cover and simmer for 20 minutes or until potatoes are very tender.</p>
<p>Allow to cool slightly and blend. Return to pot and bring to a simmer adding kale. Cook for 5 minutes or until kale fully cooked. If it is too thick add a tablespoon of water at a time.  Taste and adjust with salt and pepper. Serve drizzled with olive oil.<div class="clear"></div></div>
