This is most definitely North American Chinese food but it is simple, easy, and can be made virtually entirely from items in your cupboard.</p>

(serves 4)</em></p>
<p>2.5lbs skinless chicken pieces ( I used thighs and drumsticks)<br />
1/2 dozen medium brown mushrooms<br />
1/2 cup soy sauce<br />
1 tablespoon sambal oelek<br />
2 tablespoons roasted sesame seeds + some for garnish if desired.<br />
1 clove garlic, minced<br />
1 tablespoon minced fresh ginger<br />
1/2 teaspoon sesame oil<br />
2 tablespoons chinese cooking wine<br />
2 tablespoons ketchup<br />
3 tablespoons honey<br />
1 tablespoon fresh cilantro for garnish</p>
<p>Put mushrooms in slow cooker or crockpot followed by chicken.  Combine remaining ingredients in a bowl and pour over chicken. Cook on high for 3 hours. ( You can probably cook on low for 6-8, but I haven&#8217;t tired this.)  Serve with rice or noodles and extra gravy.<div class="clear"></div></div>

Yeah me neither, but so I have been told. Luckily, what does work is buying the meats when they are on special, and tossing them in the freezer. I picked up this pack of short ribs for about $5, tossed them in the freezer 6 weeks ago, and then forgot about them.</p>
<p>While I forgot about them, J remembered. The man loves his braised meats. After several nags, I finally got it together and grabbed all the ingredients needed.This is a dish I have eaten at <a href="http://www.vijs.ca/">Vij</a>&#8216;s in Vancouver and it was delicious. Since it&#8217;s ingredients are all things readily on hand I thought I would attempt to make it in the crockpot. Although this recipe is available in his <a onclick="javascript: pageTracker._trackPageview('/amzn=/vij/170609/1/');" href="http://www.amazon.com/gp/redirect.html?ie=UTF8&amp;location=http%3A%2F%2Fwww.amazon.com%2FVijs-Elegant-Inspired-Indian-Cuisine%2Fdp%2F1553651847&amp;amp;amp;amp;tag=dailyunadvent-20&amp;linkCode=ur2&amp;camp=1789&amp;creative=9325">cookbook</a>, I also found <a href="http://www.foodtv.ca/recipes/recipedetails.aspx?dishid=4842">it on the foodtv canada website</a>.</p>
<p>I adapted the recipe for use in the slow cooker, and omitted one spice as I was too lazy to grind myself &#8211; fenugreek.  Just as Vij did, I served it on some steamed kale which was delicious. I swear curry and kale are such good friends. Plus, since I discovered how easy it is to cook kale in the microwave I have been using it more and more.  Because of all the fat in the ribs I stuck this in the slow cooker at night, transferred to the fridge in the morning and then had it for dinner.</p>
<p>The original recipe claims to serve 4,  but it only served J and I wih no leftovers. Then again it was good and we were piggies.</p>

<p>2 tablespoon canola or vegetable oil<br />
1 tablespoon ghee or clarified butter<br />
1 tablespoon cumin seeds<br />
1 piece of cinnamon bark ~ 2 inches long<br />
2 small or 1 large onion, finely chopped<br />
2 big cloves garlic, minced<br />
1 cup canned whole tomatoes, drained of juice and gently mashed to break up<br />
1 tablespoon ground cumin<br />
1/2 teaspoon turmeric<br />
1/2 teaspoon cayenne<br />
1 tablespoon chili powder<br />
1/2 cup red wine<br />
4 cups chicken stock<br />
6  bone-in beef short ribs</p>
<p>Heat oil to medium heat, add butter\ghee and stir until melted. Add cumin seeds and saute for 30 seconds. Add onion and cinnamon and saute until lightly browned, about 5 -7 minutes. Add garlic and cook for 1 more minute. Lower heat to medium low. Add tomatoes and remaining spices and stir until combined. Turn heat up to medium and cook until oil separates from tomatoes, stirring occasionally. Should be at most 15 minutes.  Add wine and chicken stock and simmer, uncovered for 20-30 minutes or until reduced by almost half.</p>
<p>(You can do it ahead of time to this point and refrigerate.)  Add short ribs and sauce to slow cooker. Cook on low for 8-10 hours. Separate sauce from ribs and remove bones. Allow sauce and ribs to cool a bit and then store them in the fridge.  You want to refrigerate it long enough to have all the fat rise to the top and solidify, a day should be plenty.  Spoon fat off the top, reheat sauce and then ribs.</p>
<p>Serve on steamed kale and with basmati rice.<div class="clear"></div></div>

Feel free to use whatever chicken parts you have, I used thighs because I had them. <p>1 onion chopped<br />
1 stalk celery, chopped<br />
2 small carrots, chopped<br />
1 green pepper chopped<br />
2 cloves garlic, minced<br />
1 small can green chilies<br />
1 cup enchilada sauce<br />
1 large can of whole tomatoes<br />
1 tablespoon ground cumin<br />
1 tablespoon ground coriander<br />
1 teaspoon salt<br />
freshly ground pepper<br />
1 tablespoon chili powder<br />
1 teaspoon oregano<br />
6 skinless bone-in chicken thighs<br />
1 quart water<br />
1C frozen corn kernels</p>
<p><span style="font-style: italic;">Optional toppings:</span><br />
chopped green onion<br />
minced fresh cilantro<br />
grated cheddar cheese<br />
sour cream or plain yogourt<br />
corn tortilla strips. (Chop up tortilla spray with Pam, toss and bake at 400F for a few minutes)</p>
<p>Combine all ingredients up to and including the oregano in the slow cooker or crock pot and stir. Add chicken and water and stir. Place and low and cook for 6-8 hours (or 3-4 on high, I used a combination.) Remove chicken to a plate. Stir in corn. Shred chicken and stir back into the soup. Taste and correct for seasoning. Cook for another 10 minutes. Serve hot with optional toppings.<div class="clear"></div></div>

One of the funny things that sometimes happens in this blog-cooking world is trying to cook a classic that you have never tasted before. I remember doing it with the <a href="http://www.dailyunadventuresincooking.com/2006/08/how-to-make-orecchiette-my-way_14.html">Orecchiete</a> which were fabulous. As well as with a pot of Chicken and Dumplings that I was told weren&#8217;t quite right &#8211; they didn&#8217;t make the blog lets just say. So this chicken paprikash is good, but is it authentic? Probably not.  It was dead easy and very tasty, which as far as I am concerned is what matters.</p>
<p>I served this up on a bed of spaghetti squash and I really liked the two together.  The original recipe is based on one from <a href="http://www.epicurious.com/recipes/food/views/Chicken-Paprikash-with-Sour-Cream-237284">epicurious</a> but I lightened it up a bit.<br />

<p>2 onions, thinly sliced<br />
2 tablespoons paprika<br />
1t salt<br />
1t hot pepper flakes (or use 1T hot paprika and remove 1T sweet paprika)<br />
2 chicken breasts, bone-in, skin removed<br />
salt and pepper<br />
1t canola oil or cooking spray<br />
1/2C chicken stock<br />
1/2C plain yogourt (2.5%)<br />
3T fresh dill, plus garnish<br />
Cooked Egg Noodles or Spaghetti Squash</p>
<p>Combine onions, paprika and salt in the bottom of the slow cooker.  Sprinkle chicken with salt and pepper. Heat a large skillet to medium and brown chicken in oil(or spray) until browned on all sides.  Place on onions in slow cooker.  In same pan add chicken stock and bring to a simmer.  Add to slow cooker.  Cover and cook on low for 5-6 hours.  Remove chicken breasts and turn heat off.  Stir in yogourt and dill.  Slice chicken away from bone.  Serve sauce over noodles, top with chicken and remaining dill.<div class="clear"></div></div>

<div class="print-this-content"><span style="font-style: italic;">Squash, Chickpea &amp; Red Lentil Stew</span> <span style="font-style: italic;"><br />
(makes 8 servings)</span></p>
<p>3/4C dried chickpeas<br />
1 medium butternut squash, peeled, seeded and cut into 1-inch cubes<br />
2 large carrots, roughly chopped<br />
1 large onion, chopped<br />
1C red lentils<br />
4C chicken or vegetable stock<br />
2T tomato paste<br />
2T ginger, minced<br />
1 1/2T cumin<br />
1t salt<br />
1/4t pepper<br />
1 lime, juiced<br />
1/2 bunch cilantro, chopped</p>
<p>1. Cover chickpeas in cold water by at least 2 inches. Soak overnight and then drain.<br />
2. Combine the soaked chickpeas, squash, carrots, onion, lentils, broth, tomato paste, ginger, cumin, salt, and pepper in your slow cooker.<br />
3. Cook on low until tender &#8211; I left mine on for the full 10+ hours since I had a long day.<br />
4. If you are serving it all stir in lime juice (otherwise add when you serve). Serve sprinkled with  cilantro.<div class="clear"></div></div>

			<content:encoded><![CDATA[<p>You know when you throw something together and then it turns out really well? But you didn&#8217;t.. say pay attention to what you were doing? Well that is this one. It was a major success in the slow cooker, as far as Beef Stew goes it was perfect. But I didn&#8217;t measure anything  and really, beef stew isn&#8217;t remarkable in itself but I am still getting a hold of the slow cooker. So here is what I think I did &#8211; just for next time so I can try again.</p>

<div class="print-this-content">Pat dry and salt and pepper 1C of beef stew meat.  Heat a skillet to medium and add 1T of oil and brown the meat in batches.  Remove and put in the slow cooker.  Add 3 carrots and 3 stalks of celery roughly chopped. Turn heat down to medium low and saute for a few minutes. Add a healthy pinch of dried oregano and an even bigger one of basil. (If I had an onion I would&#8217;ve added it then.)  Add 3 minced cloves of garlic and saute for another few.  Add 1T of tomato paste and  a glass of red wine. Simmer for 3-5 minutes until wine reduces.  Add 2 chopped potatoes and 2C of stock.  Stir to combine.  Pour over meat in slow cooker and set on low for 8-10 hours. Serve with crunchy bread.<div class="clear"></div></div>

My slow cooker experiments continue &#8211; and without disastrous results thankfully. When I bought my crockpot I had fantasies of eating long braising dishes on weeknights &#8211; namely our favorite, the lamb shank.  It took me almost 6 months but I finally did it and it was worth it.<span class="fullpost"> This recipe was thrown together inspired by my <a href="http://www.dailyunadventuresincooking.com/2007/03/lamb-shanks-with-white-wine-and.html">original favorite lamb shank recipe</a>. I call this recipe the <span style="font-style: italic;">Slow Cooker Italian Lamb Shank </span>because of the wine, anchovies, tomatoes and rosemary.  Serve it over risotto, or mashed potatoes &#8211; or if you are lazy and tired after work like me &#8211; on a bed of buttered noodles.</span></p>

<div class="print-this-content"><span style="font-style: italic;">Italian Slow Cooker Lamb Shanks</span><br />
<span style="font-style: italic;">(serves 4)</span></p>
<p>3 slices bacon, diced<br />
4T flour<br />
1T olive oil<br />
1T rosemary, crushed<br />
2 dried thai chilies, crushed<br />
salt and pepper<br />
4 lamb shanks, trimmed<br />
1 small onion, diced<br />
2 stalks celery, diced<br />
1 large carrot, diced<br />
1/2 red pepper, diced<br />
2 cloves garlic, crushed<br />
2T balsamic vinegar<br />
2T anchovy paste<br />
1 glass white wine<br />
1 large can crushed tomatoes<br />
2T tomato paste</p>
<p>1. In a large skillet cook bacon on medium low heat until crisp.  Remove to slow cooker.  Combine flour, rosemary, chiles, two good pinches of salt and grindings of pepper. Dust each lamb shank in the mixture.<br />
2. Add olive oil to the pan and brown shanks on each side over medium heat.  Remove and place in one layer in slow cooker.<br />
3. Add onion, celery and carrot and cook for 3 minutes to soften. Add garlic and cook another minute.  Add balsamic and white wine and let it cook to reduce halfways, and remaining ingredients, stir to combine and pour over shanks.<br />
4. Set slow cooker on high for 3-4 hours or low for 8 hours.<br />
5. Can be made a day ahead, separate sauce from shanks when storing and spoon the fat off the sauce if necessary.<div class="clear"></div></div>

Does anyone else have any books like that? That you hated as a kid and loved as an Adult?</span></p>
<p>As for the recipe, when I first got my copy of the <a onclick="javascript: pageTracker._trackPageview('/amzn/gsc/200308/1');" href="http://www.amazon.com/gp/redirect.html?ie=UTF8&amp;location=http%3A%2F%2Fwww.amazon.com%2FGourmet-Slow-Cooker-Regional-Comfort-Food%2Fdp%2F1580087329&amp;tag=dailyunadvent-20&amp;linkCode=ur2&amp;camp=1789&amp;creative=9325">Gourmet Slow Cooker</a> one of the most appealing recipes was the recipe for Pulled Pork. I love pulled pork, especially good and spicy so making it in the slow cooker or crockpot was instantly appealing.  I made it several times, each time changing it up a little more until I was at this version, which is really quite different than the original. I found the original a little too sweet and missing any spicy kick.   As easy recipes go this is great,  it really only takes 5 minutes the night before to mix the sauce up and 2 minutes in the morning to throw it together.  I have left this for 10 hours and I am sure if your slow cooker will let you, the pork would tolerate more.</p>
<p>This isn&#8217;t the traditional pulled pork of Louisiana BBQ, but you are making it in a crockpot so no one will expect that anyway. What it is, is a really yummy, spicy, loose meat sandwich with pork so tender it will fall apart in your mouth. I served it on a soft bun with sliced apples and green onions but it is ultimately up to you.</p>
<p>Also, this is the recipe that led to the <a href="http://www.dailyunadventuresincooking.com/2007/11/pulled-pork-quesadillas.html">Pulled Pork Quesadillas</a> of a few months ago. You will want to know this, since, trust me, you will have leftovers.  However, even if you don&#8217;t get through all the leftovers at about $6 per  batch it is a very affordable meal and makes for great work sandwiches for the next few days.</p>

<p>3 lbs pork roast<br />
1 ¾ cups ketchup<br />
3 tablespoons apple cider vinegar<br />
½ cup water<br />
1 small onion, finely chopped<br />
5 cloves garlic, minced<br />
1 pinch chili powder<br />
1 tablespoon Worcestershire sauce<br />
1 tablespoon tamarind paste<br />
1 teaspoon liquid smoke<br />
3 tablespoons chili paste, (sambal oelek)</p>
<p>Combine everything except the pork. Put pork in the slow cooker and pour sauce over top. Cover and cook for 8-10 hours on low. Remove and allow to cool enough to tear meat apart, add back to slow cooker and stir into sauce. Serve on warm, soft buns.<div class="clear"></div></div>

<div class="print-this-content">So here is how it works, put a bunch of chicken bits in your slow cooker. For example I used approximately 5C of necks and backs.  Roughly chop a carrot, a stalk of celery and a small onion or part of one.  Throw in a few peppercorns, a bay leaf and a sprig of parsley &#8211; if you are feeling fancy go ahead and tie it up with cheesecloth. Cover the whole thing with water with at least an inch of water on the top. (Total in my slow cooker was about 6Qt including the chicken and veggies.)   Poke the chicken down if it floats, you want to make sure it is submerged.  Now turn it on to low and walk away &#8211; for 10 to 12 hours.   You now have chicken stock. Stick it in the fridge skim the fat off when it is solidified and use or freeze.</p>
<p>Tip: When you go to remove the stock from the pot use a ladle rather then draining it like pasta. Stirring up the stock can cloud it by stirring up all the impurities.</p>
<p>I like to do it overnight, pack the stock into the fridge in the morning and skim it in the evening and then it is ready to use.<div class="clear"></div></div>

Lastly the television is off and we sit at the table (or the kitchen island, since we have no table) to eat.</p>
<p>We were so successful on Monday night that not only was dinner served within 20 minutes of me getting home (7:30)but that we had wine and dessert!  For this, I thank not only my <a href="http://www.amazon.com/KitchenAid-7%252dqt%252e-Cooker-Gloss-Cinnamon/dp/B000GTV3ME/ref=combo_pack_i_3">slow cooker</a> but the <a onclick="javascript: pageTracker._trackPageview('/amzn/gsc/90108/1');" href="http://www.amazon.com/gp/redirect.html?ie=UTF8&amp;location=http%3A%2F%2Fwww.amazon.com%2FGourmet-Slow-Cooker-Regional-Comfort-Food%2Fdp%2F1580087329&amp;tag=dailyunadvent-20&amp;linkCode=ur2&amp;camp=1789&amp;creative=9325">slow cooker cookbook </a>from which I am starting to learn ratios and techniques on how to use it.  I foresee many more comforting stewy meals, it is so exciting knowing that you have  good meal waiting for you at home.</p>

<span style="font-style: italic;">(serves 4)</span></p>
<p>3 pounds pork or beef ribs, trimmed of excess fat and portioned<br />
½C soy sauce<br />
1C orange juice<br />
2T rice vinegar<br />
2T ginger, grated<br />
2t hot chili flakes<br />
3 cloves garlic, finely minced<br />
2T toasted sesame oil<br />
2T honey<br />
3T toasted sesame seeds, for garnish<br />
2 scallions, thinly sliced for garnish<br />
2T corn starch, as needed.</p>
<p><span style="font-style: italic;">The night before:</span><br />
Place a large saute pan over medium heat add ribs and cook for 15-20 minutes until browned on all sides. Cool quickly and transfer to the fridge in a sealed container*.<br />
In a Tupperware combine the soy sauce, juice, vinegar, ginger, garlic, chili, oil and honey and mix well. Refrigerate.</p>
<p><span style="font-style: italic;">The next day:</span><br />
Transfer ribs to slow cooker and pour sauce over top. Cook on low for 6-8 hours or until meat is very tender.<br />
To serve arrange on a platter and pour sauce over top, garnish with scallion and sesame seeds.</p>
<p>If you have extra sauce, throw it in the fridge and use as the basis of stir fry sauce the next day.   I marinated some chicken breast strips in a bit of this and a bit of chinese cooking wine, drained it and then tossed it in 1 part cornstarch, 1 part flour, 1 part sesame oil and 1 part peanut oil. Fry it up along with some veggies, add the sauce and a bit of water if necessary along with some noodles and poof fabulous stir fry. Toss with some cilantro, scallions, fresh ginger and toasted sesame seeds. A delicious way to stretch the leftovers.<div class="clear"></div></div>

*<span style="font-style: italic;">Note</span>: There are potential food safety issues with partly cooking meat and then finishing the cooking later, while I do it and I have found books which advocate it and others which don&#8217;t I think you are safe as long as you minimize the amount of time the food is in the danger zone. After searing it bring it down to temperature as soon as possible so it can be put in the fridge.</p>
